On Tuesday 20th September, Executive Chef of The Cinnamon Collection, Vivek Singh, is joining forces with some of the country’s most renowned chefs – Calum Franklin, Chris and Jeff Galvin, Lisa Goodwin-Allen and Saiphin Moore – for an exclusive five-course supper club at Cinnamon Kitchen City in Devonshire Square, all in aid of Hospitality Action.
Taking over the kitchen for one night only, the star-studded dinner will see each chef prepare one course around the central theme of ‘spice’, which is inspired by Vivek’s pioneering of the Indian fine-dining food scene in London.
The evening will begin with a sparkling reception by Hattingley Valley, where guests will taste the award-winning Classic Reserve alongside delicious canapés of courgette fritters cooked by Saiphin Moore, and lamb roomali from Vivek Singh. Once seated, Moore will kick proceedings off with an appetiser of larb minced chicken salad served in lettuce cups with a side of muri – Indian puffed rice.
Next, Calum Franklin will bring his pastry expertise to the table with a delicious wild duck en croute, served alongside Vivek’s hot sweet pumpkin chutney, before the Galvin brothers plate up a luxurious cured salmon served with Baeri caviar in a ponzu dressing. Vivek’s signature dish of clove-smoked lamb saddle serves as the main course, enjoy with a beetroot keema in a saffron sauce and biryani rice. Dessert is no afterthought, as diners will indulge in Lisa Goodwin-Allen’s lightly spiced Valrhona chocolate with hazelnut and lime.
Guests can opt for a wine pairing to complement each course, chosen by The Cinnamon Club’s wine sommelier Laurent Chaniac. Brian Turner, CBE, will be hosting an auction on the night, where a selection of luxury prizes will be up for grabs! All proceeds from this will be donated to Hospitality Action – expect chef masterclasses, bespoke dining experiences and vineyard tours.

In February 2021, Hospitality Action announced the launch of its cookbook ‘Chefs at Home’ which Singh, Franklin, the Galvin Brothers, Goodwin-Allen and Moore each contributed recipes to in support of raising money for the hospitality industry. To commemorate the chefs coming together again, copies of the book will be available for purchase on the night.
